  • 4 boneless and skinless chicken breast halves
  • 1 can chipotle peppers in adobo sauce
  • Chopped small onion
  • 2 peeled cloves of garlic
  • 3 tbsp olive oil
  • 2 juiced limes
  • 1 tsp dried Mexican oregano
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1 bunch of fresh chopped cilantro

  • You initially combine 1-5 chipotle peppers with the olive oil, adobo sauce, garlic, onion, lime juice, salt, and oregano in a processor. Next, blend till smooth and add water if needed.
    It is best to reserve a tiny amount of the marinade mixture to enjoy with the grilled chicken later on.
  • To make it simpler to store in the fridge, you can combine the chicken pieces and the marinade in a zip-top bag. Put it in the fridge for around 30-60 minutes.
  • Preheat the grill to reach medium heat, then oil the clean grill grate. Take the bird out from the marinade and thoroughly discard excess.
  • Put the breasts on the grill and wait until there is no pink color in the center. You should check if the juices of the meat run clear, around 8 minutes for each side.
  • It's time to remove the bird from your grill and put it on a plate. You can squeeze the remaining lime juice onto the chicken and then garnish it with cilantro. Enjoy with the saved marinade mixture.
Slice up the middle to make butterfly chicken breasts. Thus, they can still be attached and opened when grilled, allowing them to grill faster and the prepared simple marinade to absorb easier.
