  • 1 whole chicken (about 3 pounds)
  • 3/4 cup sour cream
  • 2 diced cloves of garlic
  • 1/4 cup diced red onion
  • t tsp dried dill weed
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 1/2 tsp ground black pepper
  • Firstly, it is essential to remove the backbone to grill the whole chicken more evenly. You can do this by putting the breast of the chicken side down on the work surface with its tail end towards you.
    It is best to use robust kitchen shears or a sharp boning knife to cut the chicken from the front to the rear next to its backbone. Then turn it to let the neck end face you and continue cutting the other side.
    Now you can find it easy to eliminate the backbone and utilize it to make discards or stock. What you need to do next is to turn your chicken over and cut the wishbone or tailbone. Spread it out flat like a butterfly shape.
