Whole Fresh Ham
- 10 lbs Fresh ham
- 2 cups Dry rub
- 1 cup Yellow mustard
- 1 cup Pineapple juice
- 1 tbsp Brown sugar
- You need to prepare your ham by cutting the skin with diamond slits patterns, and the depth is ¼ inch. After that, you coat it with yellow mustard, then a layer of dry rub. (May you interested in dry rub for ribs)
- Next, smoke it at 225 degrees F. You will make a mixture of one pineapple juice cup and one tablespoon of brown sugar. It is necessary to coat your ham surface by using a silicone brush with that mixture every two hours.
- As the internal temperature is at 160 degrees F, you remove the ham and wrap it with foil. Note that leave the foil open for smoking. Place your ham back in the smoker and wait for the internal temperature to reach 200 degrees F. At that time, you remove the ham and let it rest for 30 minutes.
