Equipment

  • 2 clays of bricks
  • Heavy-duty aluminum foil

Ingredients

  • 1 whole chicken (about 3 pounds)
  • 1 tsp olive oil
  • Ground black pepper and pinch salt

Instructions

  • You will need to put the chicken on a board with the breast side down. Then take away its backbone and one inch of the bone of breast with shears.
Do not forget to eliminate the tips of the wing and any big fat pockets near the chicken's tail. Flip it over and utilize your hand's press heel to flatten it. It's time to pour oil to rub the skin and season with pepper and salt.
  • You can cut two pieces of aluminum foil to merely 20 inches in length. Wrap the brick with the foil. Next, oil the grate of the grill before adding the bricks.
  • To get the best result, you will need to preheat the grill to 400 degrees Fahrenheit and remain the temperature until the bricks get hot.
  • Now the middle burner needs to be turned off to put the chicken on the indirect heat. Put the bricks on the bird and close the grill's cap.
  • Wait for roughly 40 minutes and remove the bricks to turn the bird. It is advisable to grill until the chicken skin is crispy for about 5-10 minutes.
Use a digital thermometer to check the temperature. If it reads 165 degrees Fahrenheit or above, it's time to remove the chicken and let it rest for about 10 minutes.

Notes

As each grill machine type is unique, it is best to check the temperature and adjust the flame. The ideal temperature range is 400 – 450 degrees Fahrenheit.
