  • 1 whole chicken of about 4.5 pounds
  • 1 cup olive oil
  • 3 tbsp chopped oregano
  • ¼ cup lemon juice
  • 3 minced cloves of garlic
  • 1 tsp dried tarragon
  • 2 tsp minced rosemary
  • Ground black pepper and salt


  • The first step is to prepare a mixture of tarragon, rosemary, garlic, oregano, lemon juice, and olive oil in a cup with measurements.
  • Preheat the grill to reach at least medium-high heat and pour a layer of oil on the grate of the grill.
  • Put the whole bird on a baking sheet. Pour half of the oil mixture over it and reserve the rest. Use your hands to massage the mixture into the skin. Then season with pepper and salt.
  • It's time to grill the chicken with the skin side up for about 50 minutes over indirect high heat. Move it over direct high heat and grill for about 5 minutes.
    Then gently flip it and grill until you can see its skin is crispy and brown. Remove the chicken from the grill and put it on a platter to rest for about 10 minutes.
  • To make the chicken dish more flavorful, drizzle the rest of the oil mixture over it. Enjoy!


Remember to utilize sharp shears to spatchcock your chicken. Cut along the sides of the backbone and take it away. Utilize your hands to press down on the chicken’s side to flatten.
