Ingredients
  

  • 1/4 cup virgin olive-extracted oil
  • Juice of 2 limes
  • 2 cloves garlic, chopped
  • 2 large shallots, chopped
  • 1 tbsp ground cumin
  • 1 tbsp cayenne pepper
  • Flake salt
  • 1/2 chopped bunch cilantro
  • 6 oz center-cut salmon fillet
  • 1 pint grape tomatoes
  • Vegetable oil
  • 2 cup mixed salad greens

Instructions
 

  • Preheat the grill to medium temperature for a couple of minutes. Meanwhile, you can rub the salmon with two tablespoons of olive-extracted oil, juice of one lime, garlic, shallots, cumin, and cayenne.
  • Then, add half a teaspoon of cilantro and a teaspoon of salt. Let it marinate for 15 minutes at room temperature. Meanwhile, you can slice the tomatoes and process the heart of the palms.
  • After that, mix the tomatoes and the rest of the cilantro. Then add two tablespoons of virgin olive-extracted oil and juice of the remaining lime. Add salt to taste.
  • Now, brush the grill grate with vegetable oil. Grill the salmon on each side for about 4 minutes. When it is done, place it on the plate.
  • Decorate with the greens and hearts of palm salad. Finally, you can drizzle the juices from the salad over the greens.
