Ingredients
  

  • 8 boneless and skinless chicken thighs
  • 2 minced cloves of garlic
  • cup diced and peeled fresh peaches
  • ¼ tsp smoked paprika
  • ½ tsp ground cumin
  • 1 cup diced and pitted red cherries
  • ¼ tsp cayenne pepper
  • 2 tbsp minced and seeded jalapeno pepper
  • 2 tbsp minced red onion
  • ¼ tsp ground coriander
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • cup chopped cilantro
  • Ground black pepper and salt

Instructions
 

  • Mix orange juice, olive oil, cumin, lime juice, garlic, paprika, cayenne, pepper, and salt into a zip-top plastic bag. Next, gently seal and squeeze these ingredients before adding chicken thighs.
    To ensure the spices absorb into the meat evenly, you need to press out the air, seal the bag, and leave it flat in the fridge.
  • It is best to marinade for over four hours and turn the plastic bag over every two hours.
  • Now you will need to prepare the salsa before heating the grill. To make it, you blend cherries, cilantro, cherries, red onion, lime juice, and jalapeno in a bowl. Gently toss and refrigerate it.
  • To ensure the meat can receive enough grilling heat, you need to preheat the grill to medium high heat for around 20 minutes.
  • Use a grill brush to add a layer of olive oil to the grate of the grill. Remove the chicken thighs from the bowl and discard all the excess. Arrange them on the grate and grill until you cannot see any pink spot in the center.
    Besides, you can use a digital thermometer to check if the center's temperature reaches above 165 degrees Fahrenheit.
