Get a cling film and lay its length on your chopping board.
Combine all the dried spices, herbs, pepper, lemon zest, and salt in a small bowl.
Spread half of the spice mixture on a cling film. Put your chicken breasts on top and sprinkle the remaining spices. Cover the meat pieces with another layer of cling film.
Use a rolling pin and lightly pound the chicken. This step helps flatten and tenderize the defrosted meat piece.
Heat the frying pan with olive oil on. Cook your chicken for 4 minutes in this hot oil until its surface turns golden.
Turn your chicken breast to cook the other side. Add the whole garlic clove and some rosemary. Continue cooking for a few more minutes until they are all cooked through.
Squeeze lemon juice on top of the chicken. 2-3 tablespoons of water are good enough for you to deglaze the frying pan.
Toss to cover the chicken breast in these juices on the pan. You can now serve the dish right away with diverse choices of sides.
